Along with that, a big batch is also set-aside for Santa Claus, the night before Christmas.<\/p>\n<p>To make your holiday cookies some of the best yet, choose to make these soft and chewy gingerbread cookies!<\/p>\n<p><em>Ingredients<\/em><\/p>\n<ul>\n<li>2 cups gluten-free all-purpose flour<\/li>\n<li>\u00bd tsp. baking soda<\/li>\n<li>1 tsp. baking powder<\/li>\n<li>\u00bd tsp. sea salt<\/li>\n<li>\u00bd tsp. nutmeg, ground<\/li>\n<li>\u00bd tsp. cloves, ground<\/li>\n<li>1 tsp. cinnamon, ground<\/li>\n<li>1 tsp. ginger, ground<\/li>\n<li>\u00bc cup sunflower oil<\/li>\n<li>\u00be cup cane sugar<\/li>\n<li>\u00bc cup molasses<\/li>\n<li>\u00bc cup almond milk<\/li>\n<\/ul>\n<p><em>Preparation<\/em><\/p>\n<ol>\n<li>In a large bowl, whisk together gluten-free flour, baking soda, baking powder, salt, nutmeg, cloves, cinnamon, and ginger. Set aside.<\/li>\n<li>In another large bowl, beat sunflower oil and sugar together for 2 minutes.<\/li>\n<li>To the oil\/sugar mixture, add the molasses and almond milk. Continue to mix for 1 minute.<\/li>\n<li>Add the dry ingredients, about 1\/3 at a time until stiff dough is formed.<\/li>\n<li>Make the dough into a disk shape, wrap in plastic wrap and refrigerate for 2 hours, or overnight.<\/li>\n<li>Preheat oven to 350 degrees F.<\/li>\n<li>Line a baking sheet with parchment paper.<\/li>\n<li>Using a melon baller or about 1\/2 ~ 3\/4 Tbsp. of dough, roll dough into balls of approximately equal size and slightly flatten into a disk shape.
