Ginger Streusel Pumpkin Pie

Ingredients:

  • 1 refrigerated pie pastry sheet
  • 3 eggs
  • 1 can solid pack pumpkin
  • 1 ½ cups heavy whipping cream
  • ¼ cup packed brown sugar
  • ½ cup sugar
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon salt
  • ¼ teaspoon ground allspice
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves

Streusel ingredients:

  • 1 cup all-purpose flour
  • ½ cup packed brown sugar
  • ½ cup chopped walnuts
  • ½ cup cubed cold butter
  • 1/3 cup finely chopped crystallized ginger

Directions:

  1. Preheat your oven to 350 degrees. Unroll the pastry on a lightly floured surface. Transfer the pastry to a 9-inch pie plate. Trim the pastry to ½ inch beyond the edge of the plate and flute the edges.
  2. Whisk the eggs, pumpkin, sugars, cream, cinnamon, salt, allspice, cloves, and nutmeg together in a large bowl. Pour into the pastry shell and bake for 40 minutes.
  3. Make the streusel by combining the flour and brown sugar in a small bowl. Cut in the butter until crumbly. Stir in the ginger and walnuts. Gently sprinkle over the filling.
  4. Bake for 15 to 25 minutes longer or until a knife that is inserted near the center of the pie comes out clean. Cool on a wire rack.
