Pork Kabobs

Alternate slices of marinated pork with your favorite summer veggies on a skewer. Zucchini, eggplant, and peppers are just a few of the many possibilities. Cook on a pre-heated grill for about 4 minutes per side. (Substitute chicken, shrimp or turkey for the pork.)

Grilled Sausage Pasta Salad

Prepare one pound of pasta according to package directions. Slice one bell pepper, one medium zucchini and one red onion. Place in a grilling basket on a preheated BBQ with one pound of turkey sausage (hot or sweet), When done, cut veggies and sausage into bite sized pieces and add to pasta. Mix together 5 tablespoons of olive oil with 6 tablespoons of balsamic or red wine vinegar and blend well. Pour dressing over pasta and toss to coat thoroughly. Serve warm or at room temperature.
